Ingredients
6 Large hard-boiled eggs, peeled
1/3 cup Shredded taco-seasoned cheese (or sharp cheddar)
1/4 cup Mayonnaise
1/4 cup Sour cream
3 tbsp Green onions, finely minced
Instructions
- Prep the Eggs: Cut the hard-boiled eggs in half lengthwise. Gently remove the yolks and place them into a small mixing bowl. Set the whites aside on a serving platter.
- Mash & Mix: Use a fork to mash the yolks until smooth. Add the shredded cheese, mayonnaise, sour cream, and green onions. Mix until well combined.
- Fill: Spoon one heaping tablespoon of the yolk mixture back into each egg white half.
- Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to blend before serving.
