Mother's Day Mimosa Bar

A beautiful outdoor brunch is the perfect way to celebrate your mom. Of course, you can’t have brunch without a good mimosa. But why settle for just your regular old orange juice when you can offer a variety of fun flavors? This spring-themed bar features three sweet and tangy favors, peach-orange, strawberry-pineapple, and blueberry-lemon that you can enjoy individually, in a flight, or have some fun mixing and matching. For an option without alcohol, try mixing with lemon-lime soda.

Ingredients

  • 10 oz. bag frozen blueberries
  • 1 oz bag frozen strawberries
  • 10 oz. bag frozen peaches
  • 1 cup orange juice
  • 1 cup pineapple juice
  • 2 tbsp sugar
  • 2 tbsp water
  • 1 lemon
  • champagne

Instructions

Peach-orange

Mix the peaches and orange juice in a high-powered blender until smooth, about 45 seconds.

Strawberry-pineapples

Mix the strawberries and pineapple juice in a high-powered blender until smooth, about 45 seconds.

Blueberry-lemon

In a small saucepan, combine frozen blueberries, sugar, the zest and juice of the lemon, and the water. Cook on medium low heat for 10 minutes or until most of the berries burst. Using the back of a spoon or a potato masher, mash the berries until smooth. Place a fine sieve over a bowl and pour the mixture into the sieve. Use the back of a spoon to extract all juice from the pulp.

To Serve

For a buffet-like experience, pour each of the flavors into small pitchers or mason jars and arrange on your brunch table with buckets of champagne. Provide each guest with a glass to mix their own favors. If you prefer a flight, pour two tablespoons of each mixture into three small glasses for each guest and top with 3 ounces of champagne.
