1/4 cup rolled oats 1/4 teaspoon salt 1/2 teaspoon baking soda 2 tablespoons ground flax seeds 1/2 cup dark cocoa powder 1 can (15 oz.) black beans, rinsed 1/4 cup creamy peanut butter 3 teaspoons vanilla extract 3/4 cup sugar 3 teaspoons lemon juice or apple cider vinegar 1 cup dark chocolate chips, plus extra to top
Preheat oven to 350 degrees. Line an 8 x 8 square baking dish with parchment paper.
In a food processor, combine rolled oats, salt, baking soda, ground flax, and cocoa powder. Process until it resembles coarse flour. Add black beans, peanut butter, vanilla extract, sugar, and lemon juice or apple cider vinegar. Process until smooth, then add 1/2 cup chocolate chips, making sure to scrape the sides.
Take out food processor blade and mix in remainder 1/2 cup chocolate chips. Scrape batter into prepared pan and smooth out batter top. Sprinkle with extra chocolate chips.
Bake until top begins to crack, about 25-30 minutes. Let cool completely in pan before cutting. Cut into 12-16 squares.
