Minimal ingredients and high yield make this recipe a win-win!
3 pounds Boneless Chicken Breasts or Thighs
1 Packet Taco Seasoning of Choice (Mild, Hot, Low-Sodium, etc)
1 (one) 14-16 oz Jar of Salsa of Choice (Mild, Medium, Hot, etc.)
1 Bell Pepper, seeded and chopped (Optional)
2-3 Jalapeno Peppers, seeded and chopped (Optional)
- Place chicken in Crockpot, then add peppers (if using), packet of Taco Seasoning then Salsa.
- Cook on High for 4-5 hours.
- Chicken will begin to come apart. Use a fork to help shred it and mix it all together.
- Serve with Cooked Rice or make Tacos with hard or soft tortillas!
