Strawberry Nice Cream

2 ½ cups frozen strawberries
2 medium bananas, peeled 
1 tablespoon lemon juice
½ cup unsweetened non-dairy milk like soy milk or coconut milk
1 tsp vanilla extract


  1. Cut bananas into ½ inch thick rounds, then freeze on a parchment lined sheet.
  2. Transfer strawberries and bananas to a food processor, or a powerful blender. Pulse until finely chopped, making sure to scrape sides with spatula.
  3. Add lemon juice, non-dairy milk, and vanilla extract. Process until smooth.
  4. Serve immediately, or transfer to a loaf pan and freeze for about an hour.
