Vegetable and Rice Soup

  • 2 tablespoons butter
  • 1 small white onion, chopped
  • 1 green pepper, chopped
  • 6 cups chicken broth
  • 1 (12 oz.) package Pictsweet Farms frozen Cut Okra
  • 1 (12 oz.) package Pictsweet Farms frozen Baby Lima Beans
  • 1 (10 oz.) package Pictsweet Farms frozen Cut Corn
  • 1 (14.5 oz.) can diced tomatoes, undrained
  • 1/2 cup instant rice, uncooked
  • salt and pepper to taste


  1. MELT butter in a large pan and sauté onions and peppers for 2 minutes.
  2. POUR chicken broth, frozen okra, lima beans and corn into the pan. Bring mixture to a boil and cook for 3 minutes.
  3. STIR in tomatoes, rice, salt and pepper.
  4. REDUCE heat, cover and simmer for 20 minutes or until vegetables and rice are tender.
